What do Lucques from Languedoc PDO taste like?

The olive Lucques du Languedoc PDO is a green olive, whole, neither scored nor cracked. It is de-bittered using an alkaline solution and is sold in brine,either chilled or pasteurised.
At a glance, you will see that the fruit and stone are distinctive: the fruit is green in colour and asymmetrical in shape, resembling a crescent. The flesh is light in colour. The stone is shaped like a crescent moon. The skin is thin, smooth and may be slightly pitted.
In terms of flavour, the PDO olives Lucques du Languedoc is characterised by subtle aromas of avocado, particularly buttery avocado, and sometimes even fresh hazelnut or cut hay.

The Lucques from Languedoc PDO variety

The olives are exclusively of the Lucques variety, which is found mainly in the departments of Aude and Hérault. Only trees over 5 years old are permitted in PDO.

Harvesting Lucques from Languedoc PDO

The Lucques olives (100 per cent) are harvested whilst still green, by hand, directly from the tree. They are delivered to the confectionery within 24 hours of harvesting at the latest.
