What does Languedoc olive oil PDO taste like?

The Languedoc olive oil PDO is a multi-varietal oil composed mainly of the Lucques and Olivière varieties, which give it aromas of tomato and almond, both on the nose and on the palate, sometimes complemented by hints of apple.

The Languedoc olive oil PDO varieties

The distinctive character of Languedoc olive oil PDO lies in the blend of varieties, which must include and be dominated by (up to 70 per cent) at least one of the main varieties – Lucques and Olivière – which may be blended together.

Traditional local varieties such as Picholine, Verdale de l’Hérault, Ménudel, Amellau, Clermontaise, Rougette de Pignan and other heritage local varieties may be included in the blend. Pollinator varieties must not exceed 10 per cent.

Olive harvesting for Languedoc olive oil PDO

The olives are picked directly from the tree or harvested by vibration, beating, suction or any other method that does not damage the olives’ external appearance, with the fruit being collected in nets or other containers placed beneath the tree. The olives are harvested when ripe, i.e. when 40 per cent to 70 per cent of the olives have turned colour, meaning they have changed from green to yellow. Delivery to the mill takes place within a maximum of three days after harvesting.

Extraction of Languedoc olive oil PDO

The extraction process comprises the following stages: leaf removal, washing, crushing, mixing, extraction by centrifugation or pressing, settling, centrifugation and filtration. The production of Languedoc olive oil PDO must take place within a maximum of 8 days after harvesting.
